Delicious- Nutritious- Versatile ingredient to work with!

Paneer or cottage cheese as we know best know it as, is one of those special category ingredients in our kitchen which has a lot of popularity and a great fan following as well around the country with a number of recipes which can be made using it. Paneer can be used and prepared for dishes to enjoy throughout the day, be it a stuffed paneer paratha with a bowl of curd to start the day, kadai paneer, mattar paneer, shahi paneer, palak paneer, methi paneer, malai kofta using paneer and the list goes on!

Paneer has also been used in a number of ways with rice as well. One of my all-time favorite is the dum wala paneer tikka biryani which is just out of this world, a nice tandoori marination, cooked in the oven or tandoor with cubes of onions, capsicums, tomatoes and layered with a aromatic and creamy makhani gravy, cooked rice, added flavor from the golden fried sliced onions, rose water, fried nuts, mint- coriander leaves, saffron milk solution and then a dum effect!

Besides paneer pakoda, paneer grilled sandwich, masala paneer dosa, paneer stuffed samosas we also have the chenna fresh home-made cottage cheese being used in some of our Bengali sweets namely the rossogulla, Sandesh etc. a delectable humble and neutral ingredient which is able to adapt to various cooking styles, spices, sweetness for mithai and desserts and much more.

Here are a few of my all-time favorites with Paneer!

Recipe-1] KADAI WALA PANEER

Ingredients:

Paneer-250 gms, cut into cubes

Green capsicum-1 cup cubes

Onion-1/2 cup cubes

Oil-2 tsp

Ghee/butter-2 tsp

Dry red chili- 1-2 no

Bay leaf- 1 no

Peppercorns-2-3 no

Cloves- 2-3 no

Ginger-garlic paste-1 tsp

Green chilies-1 tsp chopped

Onions-1 cup chopped

Tomatoes chopped/ puree-1/2 cup

Salt to taste

Turmeric powder-1/4 tsp

Red chili powder-1/2 tsp

Roasted crushed coriander seeds-1 tsp

Cumin powder-1/2 tsp

Water-1/2 cup

Fresh coriander leaves-2-3 tbsp.

Lime juice-2 tsp add and serve.

Method:

1. Prepare all the ingredients for the kadai wala paneer.

2. Heat oil, butter/ghee add in the whole spices, red chilies and then add in the onions, saute till light brown, add in the ginger-garlic paste, cook for 2 mins, add chopped green chilies.

3. Add in the chopped tomatoes/puree, salt and all powdered spices as per taste, add little water and cook the masala for 6-8 mins on a medium flame, let the oil leave the sides.

4. Add in the capsicum, onion cubes, add in the paneer cubes and mix well, cover and cook for 4-6 mins. Serve hot garnished with coriander and dash of lime juice.

Recipe-2] MASALA PANEER SEEKH

Ingredients

Paneer-250 gms

For the marination:

Curd- 1 cup, thick, beaten.

Salt to taste

Ginger-garlic paste-1 tsp

Red chili paste/ green chili paste-1 tsp

Garam masala powder-1/4 tsp

Coriander powder-1/2 tsp

Cumin powder-1/4 tsp

Turmeric powder-1/4 tsp

Red chili powder-1/4 tsp

Chaat masala-1/2 tsp

Aamchur powder-1/2 tsp

Oil-2-3 tbsp.

Lime juice-2-3 tbsp.

To serve with:

Onion rings/ lemon slices/ green chutney etc.

Method:

1. Prepare all the ingredients for the paneer on seekh recipe.

2. In a mixing bowl, combine together the ingredients for the marination and mix well.

3. Add in the cubes of paneer, capsicums, onions, tomatoes as desired and mix well, keep refrigerated for 30 mins.

4. Heat up a grill/ oven and pre-heat it for the cooking of the paneer seekh.

5. Using skewers, assemble the paneer and other veggies alternatively and place it for cooking, and once done place it on the serving platter with accompaniments and serve hot.

Recipe-3] PANEER KI BHURJI

Ingredients

Oil-2 tsp

Ghee/butter-1 tsp

Cumin seeds-1/2 tsp

Red chilies-1 no slit

Green chilies-1-2 slit

Curry leaves- 4-5 no

Onions-1 cup chopped

Ginger-garlic paste-1 tsp

Green chilies-1 tsp

Tomatoes-1/2 cup chopped

Green capsicum-1/2 no cut

Salt to taste

Turmeric powder-1/2 tsp

Red chili powder-1/2 tsp

Cumin powder-1/4 tsp

Coriander powder-1 tsp

Kasuri methi-1 tsp

Water-1/4 cup

Fresh coriander leaves-2-3 tbsp. chopped

Lime juice-2 tsp add and serve.

Method:

1. Prepare all the ingredients for the paneer bhurji recipe.

2. Heat oil and ghee/butter in a kadai add in the ingredients from chilies, curry leaves, cumin seeds and allow to splutter and then add in the onions, ginger- garlic paste, green chilies and cook for 2-3 mins.

3. Add in the tomatoes, all spices, salt to taste and bhunao for a few seconds, add little water and cover and cook on a low flame for 8-10 mins.

4. Now add in the capsicums and crumbled/ grated paneer into the mixture and toss it with the masala.

5. Cover and simmer for 4-5 mins and then add coriander leaves and dash of lime juice and serve it hot with phulkas/rotis.

Recipe-4] AATISHI PANEER

Ingredients

Paneer- 250 gms cut into cubes

Oil-2 tsp

Ghee/butter-1 tsp

Cumin seeds-1/2 tsp

Hing-1/4 tsp

For the masala paste:

Red chilies- 4-6 no boiled

Ginger-1-inch piece

Garlic- 4-6 cloves

Green chilies-2-3 no

Peppercorns-3-4

Cloves- 3-4

Cinnamon stick- 1-inch piece

Onions-2-3 med sized

Tomatoes-1 cup chopped

Capsicum- 1 small cut

Water-1 cup to grind it all.

Additional ingredients:

Salt to taste

Red chili powder-1/2 tsp

Coriander powder-1 tsp

Kasuri methi-1 tsp

Fresh cream-1/4 cup

Cashew paste-1 tsp

Coriander leaves-2 tbsp. chopped

Method:

1. Prepare all the ingredients for the paneer recipe.

2. Using a mixer jar, combine together all the ingredients for the masala paste and grind them together with little water.

3. Heat oil, butter/ghee in a pan add in the jeera, hing and then add in masala paste and cook for 4-6 mins.

4. Add in salt to taste, all powdered spices, kasuri methi, little water and cook the masala for 6-8 mins until oil starts leaving the sides.

5. Add in the cashew paste, cream and paneer cubes and cover and cook for 3-4 mins, serve hot garnished with cream and coriander.

Recipe-5] TASTY PANEER WRAPS

Ingredients

Leftover rotis/ chapattis- 4-5 no

For the Paneer filling:

Paneer-200 gms, cut into strips

Oil-1 tsp

Butter-1 tsp

Ginger-garlic paste-1 tsp

Onion-1 small chopped

Salt to taste

Tomato puree-2-3 tbsp.

Tomato ketchup-2-3 tsp

Schezuan sauce-2 tsp

Grated cheese-2-3 tbsp.

Shredded cabbage-1/4 cup

Shredded capsicum-1/4 cup

Lettuce leaves- 3-4 no

Shredded onions-1/4 cup

Tomato strips-1/4 cup

Coriander leaves-2 tsp chopped

Method:

1. Prepare all the ingredients for the paneer wraps.

2. Heat oil and butter and saute the ingredients for the filling. Start with onions, ginger-garlic paste, cook it for 2-3 mins, add in the tomatoes, capsicums, salt, sauces to taste.

3. Add in the paneer strips and mix well, cook it in the mixture for 2-3 mins. Heat up the rotis a little and apply a spread of your choice, schezuan sauce/ mayonnaise/ ketchup etc as desired.

4.Place the lettuce/ cabbage, strips of onions, tomatoes, then place the cooked paneer mixture and sprinkle cheese, coriander leaves and roll up the preparation. We can also grill it or bake it further and serve it hot.

Recipe-6] PANEER PASANDA ROLL

Ingredients:

Paneer- 250 gms cut into cubes

Hot dog rolls- 4- 5 no

For cooking the paneer:

Oil-1 tsp

Butter-1 tsp

Garlic-1 tsp chopped

Green chilies-1 tsp chopped

Lime juice-2 tsp

Chaat masala-1/2 tsp

Peanut butter-2-3 tsp

Water-3-4 tbsp.

Tomato ketchup-2-3 tsp

Capsico sauce-1 tsp

Cream cheese/ cheese slices as desired

Onion rings-1/2 cup

Tomato rings-1/2 cup

Lettuce leaves- 1 cup

Method:

1. Prepare all the ingredients for the Paneer roll.

2. Heat oil and butter in a pan add in garlic, chilies, saute for a few seconds, add in the sauces, peanut butter, little water and reduce the flame.

3. Add in the paneer cubes and mix, add capsicums as well if desired, cook for 2-3 mins, turn off the flame add cheese and mix.

4. Slit open the bread rolls and apply little butter inside, heat them up a little, place shredded cabbage or lettuce leaves and then place onion, tomato rings followed by the paneer pieces and assemble the paneer rolls and serve.
